Jaffe was an abstract sculptor working in Florida.

Jaffe studied in Pietrasanta, Italy, with the Walter Driesbach's sculpture group.

Her most known work is a large marble sculpture titled “Sonata Sculpture” it stands in Old School Square in Delray Beach, Florida.

In 1993 at the Siemens Jewish Campus in Boca Raton three artists, sculptor Sylvia Jaffe and painters Leonard Leibowitz and Yehudis Levitan, known for incorporating their Jewish themes into their artwork, were featured in the exhibit in March of that year. Their appearances were part of the Levis Jewish Community Center's 1993 Winter-Spring Program.

Jaffe not only lived and worked in Boca Raton, but several of her works are exhibited at the Boca Raton Museum of Art.
